- This is a recipe that I happened upon when I went camping with a bunch of
- my friends. I list it as vegan because given the method of cooking,
- butter is really not a practical substitute. It is quite simple to make
- and does not require much in the way of ingredients or equipment.

- This is for one person....multiply the recipe as needed.

- 1 medium potato
- 1 Tbsp. margarine (or vegetable oil)
- seasoning to taste (What I saw used and use myself is
- Schilling Seasoned Pepper)
- salt to taste

- Cut potatoes into pieces (with the way I cut them up this ends up being
- about 1/4" by 1/2" by 1")

- Melt margarine in frying pan over campfire or on stove.

- Add potatoes, seasoning, and salt and stir/turn regularly (about once
- every 5 min, but use your judgement on this depending on cooking
- temperature) until golden brown.

- Remove from heat and serve immediately. (Though they taste good cold, too.)
